Observation (CORRECTED DURING INSPECTION): Built-up of food debris observed underneath the meat slicer guard.
Corrective Action(s): Clean and sanitize the aformentioned equipment. Meat slicer must be disassembled, cleaned and sanitzed after each-use.

Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher measured at 0ppm chlorine. No chlorine based sanitizer available at the front servicing area.
Corrective Action(s): SErvice low-temperature dishwasher to measure at least 50ppm chlorine. Prepare chlorine based sanitizer to measure at 100ppm for the front servicing area to ensure sanitation of food contact surfaces.

Observation (CORRECTED DURING INSPECTION): Observed 20L frozen beef stock thawing at room temperature.
Corrective Action(s): Move aforementioned food items into a cooling unit able to hold at least 4C or lower, thaw frozen products under cold running water, or cook frozen products immediately. No frozen food should be thawed under room temperature.

Observation: Exhaust hood vent observed to have built-up of grease.
Corrective Action(s): Clean and sanitize aforementioned area. Exhaust hood vent must be cleaned and sanitized weekly to prevent build-up of grease. Corrected by: November 10, 2022.

Routine Inspection Conducted Today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, paper towels.
Stand-up coolers, prep coolers measured at 4C or lower. Stand-up freezers and chest freezers measured at -18C or lower. Hot-holding units measured at 60C or higher.
3-compartment sink available. Chlorine sanitizer bucket in the kitchen measured at 200ppm chlorine.
Ice machine observed to be in sanitary condition. Ice scoop observed to be stored outside ice machine. Overall sanitation is satisfactory.

Overall, facility is well organized and maintained.

NOTE: Ensure to continue to clean and sanitize hard to reach areas. Ensure all food are covered in the coolers, freezers and dry storage area.
