302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Observed staff refilled sanitizer bucket. Tested solution and detected 0ppm Quats. Dispenser was dispensing 200ppm Quats. 2) Several in use utensils including knives and spreaders were submerged in room temperature water.
Corrective Action(s): 1) Ensure the wiping clothes are rung out and cleaned prior to adding new Quats. Always test the solution to ensure there is 200ppm Quats. 2) Room temperature water for in use utensils emptied. Directed staff to change to new ice water bath every 2 hours.

Observation (CORRECTED DURING INSPECTION): Spatulas were placed inside the handwashing sink.
Corrective Action(s): Please do not store anything inside the handwashing sink as it is designated for handwashing only and cannot be obstructed.

304 - Premises not free of pests [s. 26(a)]
Observation: 1) Lots of flies noted in the premises, predominately around where box of bananas are stored in the cupboard. A couple of ripened bananas were also stored in the same cupboard, no container or cover. Few ants noted crawling around box of bananas as well. 2) Mice droppings were noted in the space beside undercounter cooler as indicated to staff onsite.
Corrective Action(s): 1) Please place bananas in a closed lid container in the cupboard. Recommend placing the bulk box of bananas (has bag enclosed) in the back storage area and replenish as necessary. Obtain more closed lid containers as needed. 2) Clean and sanitize the noted area where mice droppings were identified. Last pest control service (Aug 8 ,2019) indicated no pest activity. Please have technician reservice.

Hot dogs were kept hot at 73-74C, chilli at 65C
Thermometer and alcohol swabs available to check food temperatures
->Reviewed proper food temperatures with staff onsite: minimum 74C/165F for cooking/reheating and minimum 60C/140F for hot holding food.
Ensure all staffs including new hires are trained to know safe food temperatures.
Temperature record and pest control report available for review
Health Permit is posted and staff is Foodsafe certified

*Note: recommend replacing light in refrigeration units in the dry storage room to allow for proper cleaning. Remove unused chest freezer outside of dry storage room.
