Observation (CORRECTED DURING INSPECTION): Two sausage pastry rolls found stored in ambient temperature display case. Internal temperature measured 22 degrees C. Sausage pastries were discarded at time of inspection.
Corrective Action(s): Please ensure that all potentially hazardous foods (e.g. meat/dairy) are stored either at 4 degrees C or less, or 60 degrees C or more. Alternatively, a time tracking system can be put into use. Food safety plan must be updated prior to use of time tracking--to be discussed.

Observation: Mildew observed on interior surfaces of ice machine.
Corrective Action(s): Discard ice. Properly clean then sanitize interior surfaces of ice machine and allow to dry. Date to be corrected by: Today.

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer not available at start of inspection.
Corrective Action(s): Bleach water sanitizer was prepared in a bucket at 200 ppm chlorine. Wiping cloths stored in sanitizer. Please ensure that sanitizer is always available at the correct concentration during operating hours. Store wiping cloths in bleach water to limit potential cross contamination.

Observation: Underside of chest freezer lid is in disrepair--lining is missing and insulation is showing through. Door seal is falling off.
Corrective Action(s): Please ensure underside of lid is smooth, non-porous, and easy to clean. Ensure that door seal is able to provide a proper, tight fitting seal to limit the loss of cool air. Date to be corrected by: December 2, 2017.

- Hand washing sink supplied with hot and cold running water, liquid hand soap, and single use paper towels. Note: It is recommended to install a wall mounted hand soap dispenser.
- High temperature dishwasher measured 75 degrees C at utensil surface (minimum 71 degrees C)
- General sanitation satisfactory
- No evidence of pest activity noted
