Observation: Drain flies observed, mostly in around mop sink area, but also in rear prep area (minor).
Corrective Action(s): Extend drain cleaning as discussed to include drain by walk-in cooler and mop sink area/drain.
***Mop sink area very wet with water ponding in corners and around area in general. Recommend ensuring a mop bucket remain below dispensing hoses to minimize drip effect.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Several areas of the kitchen and storage areas observed not adequately cleaned. These include:
- Two line coolers for sauces (internal cavity area and shelves);
- Under grill (excessive carbon/grease build-up);
- Floor corners in line kitchen;
- Edges and corners of prep and work surfaces in line kitchen;
- Walk-in cooler and rear prep area floor (under shelves, around legs);


Corrective Action(s): These areas need additional cleaning (frequency and/or quality) as they are spreading into direct food prep stations. Complete follow-up inspection date noted on report.

Comments

Handsink faucet in line cook area broken and needs repair. Staff can use but not properly control water flow. Ensure it is consistantly stocked with soap and paper towels.

Freezer under repair at time of inspection. Temps ok but ensure all ponding/dripping water is removed and floors/shelves cleaned up. Also, remove all soaked cardboard boxes from freezer.

Re-locate broken glass bin from ice machine area.

Temperatures reviewed - cold holding at 4 C or less, hot holding above 60 C.
Dishwashing and sanitizing OK. **Quats dispensing at 200 ppm. Make sure first fills of day for both sani-buckets and spray bottles allow system to prime prior to filling.
