- Sanitizer solution available at 200 ppm in buckets for storing wiping cloths
- High-temperature dishwasher reached above 71C at dish surface during rinse cycle - good.
- All coolers were maintaining temperatures of 4C or colder
- All freezers were maintaining temperatures of -18C or colder
- Rice hot held at above 60C at time of inspection
- Small bucket of bean sprouts stored in cold water. Ensure to use up or discard within 2 hours.
- Ice machine not in use - OK
- Shrimp thawing under cold running water at time of inspection
- In-use utensils stored in ice water at time of inspection
- No signs of pest activity noted at time of inspection
