Sani-buckets in use for surface sanitizing. Many on hand and most measured 200 ppm, except for two or three. Make sure there is a system to switch over all buckets at a specified time or verify with test strips at intervals of two hours to ensure proper concentrations in all buckets are maintained at all times. **ensure three sink method for manual dishwashing is followed. Quats dispensing at 200 ppm at source.
- Cooling units at 4 C or less **check under counter cooler door, hinge loose.
hot holding is above 60 C
- Freezer going through defrost cycle - Verified temp. logs. OK
- handwash stations properly stocked.
