Observation (CORRECTED DURING INSPECTION): Meat and cheese pita in hot holding unit noted at 53 C.
Corrective Action(s): Ensure all PHF (meats, cheeses) are maintained at or above 60 C to protect from pathogen growth. Operator adjusted unit during inspection to above 60 C.

Observation (CORRECTED DURING INSPECTION): Vinegar used to sanitize surfaces in the front shop.
Corrective Action(s): Ensure bleach and water concentration of 100 ppm chlorine is used to sanitize all food contact surfaces including counters, meat slicer and anything else contacting food. Bucket of sanitizer solution is available with wiping cloths in back kitchen area.
Vinegar is not a sanitizer and must not be used in place of a sanitizer solution.
Vinegar bottle replaced with 100 ppm chlorine solution at the front. Ensure to label all sanitizer or chemical bottles with their contents.

Observation (CORRECTED DURING INSPECTION): Mouse dead in snap trap behind smoker unit. Some droppings on the floor around dough mixer.
Corrective Action(s): Ensure pest control is informed about any pest activity. Pest control is onsite monthly. Last report done Dec 23, 2016. Pest reports reviewed - no major issues noted. Continue to monitor pest control devices and any pest activity.
