Observation (CORRECTED DURING INSPECTION): Observations: In-use utensils observed stored in room temperature water (measured 15 deg. C) with floating food debris
Corrections: store in-use utensils in the food or on a clean food contact surface/container without water. Clean in-use utensils and food contact surfaces at lest every 5 hours if not stored in food, to prevent pathogen growth

Observation (CORRECTED DURING INSPECTION): Observations: Sanitizer in bucket measured approximately 0ppm quats
Corrections: Sanitizer was replaced with new batch which measured approximately 200ppm quats. Ensure that sanitizer is replaced regularly especially during frequent use and use test strips to monitor sanitizer concentration.

Observation (CORRECTED DURING INSPECTION): Observations: Frozen raw salmon observed thawing at room temperature. Operator stated it has been thawing for 30 minutes, measured surface temp. of 3 deg. C
Corrections: Thaw all frozen fish under cold running water to minimize time spent in temperature danger zone, as was being done with the frozen tuna. Alternatively, thaw in cooler.
