Observation (CORRECTED DURING INSPECTION): Dried on food debris noted on the blade and handle of the meat slicer.
Corrective Action(s): **Issue corrected at the time of inspection** Operator dissembled the meat slicer for washing. Please ensure all food contact surfaces of the meat slicer are thoroughly washed and sanitized after every use. This is especially important due to the known outbreaks associating deli meat and Listeria monocytogenes.

Observation: An open box of paper food hot cup noted stored in a washroom that is accessible for staff and patrons.
Corrective Action(s): Store the open box of paper food hot cup elsewhere in a storage area that may not contaminate the packaging. Do not store any food or food contact items in the washroom because if someone who is contagious with a foodborne illness use the washroom, they may spread bacteria when the toilet is flushed.

Observation: 1. Pink organic buildup noted in the interior of the dishwasher.
2. Organic buildup noted in the interior of the hose dispensing the liquid pot and pan detergent.
3. Debris and buildup noted on the interior of the 2-door cooler below the meat slicer.
Corrective Action(s): Clean and sanitize all noted buildup and maintain in a sanitary condition at all time.

Routine inspection conducted today:
All handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were noted at 4.0C or below.
All freezer units were at -18.0C or below.
Hot hold units were holding hot food above 60.0C.
QUAT sanitizer spray bottle available. Noted with 400 PPM QUAT.
Drain plug available for the 2-compartment sink.
High temperature dishwasher was able to reach 187.0F at the gauge level and 77.7C at the plate level during the final rinse cycle.
No signs of pest activities noted during the inspection.
Overall cleanliness and organization acceptable.
