Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods (various proteins, sprouts) stored in prep cooler operating at 14C (probed chicken). Some items frozen, the rest have been in the cooler for less than 2 hours.
Corrective Action(s): Moved all potentially hazardous items to working cooler/freezers. Cooler temperature turned down and reached </=4C. Potentially hazardous foods may be moved back inside to cooler. Prep cooler temperature MUST be monitored regularly.

Observation: Raw wood shelving observed in storage room. Storage room also has a counter that has had the paint rubbed off over time. Raw wood is not appropriate as it can soak up moisture and contribute to mould production

Bleach sanitizer at 200 ppm. *Recommend soaking all wiping cloths within bleach solution at all times when they are not being used. Food contact surfaces must be wiped at least every 2 hours and at times to prevent cross-contamination
High-temperature dishwasher reached >/= 71C at the plate level upon final rinse cycle
All (other) coolers operating at </= 4C
All (other) freezers operating at </= -18C
Hot-holding rice at >/= 60C
