Observation: Supervisor unsure if staff have valid/non-expired FoodSafe Level 1 or equivalent training.
Corrective Action(s): All FoodSafe Level 1 certificates issued prior to July 29, 2013 retroactively expire on July 29, 2018. Staff must successfully complete a FoodSafe Level 1 or on-line FoodSafe Refresher course. FoodSafe Level 1 certificates expire 5 years after being issued. Staff are scheduled to renew their FoodSafe Level 1 certification.

Comments

-Back upright cooler was at 4C.
-Front prep coolers were all at or less than 4C.
-Front display cooler was at 4C.
-Freezers were at -10C (defrost cycle) and -16C.
-Accurate thermometers present in cold holding units.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 78C on the dish surface (minimum 71C required for proper sanitizing).
-Quats sanitizer dispenser tested at 200ppm.
-Quats sanitizer pails properly labelled and changed every 2 hours (monitored using a timer) and solution was tested at 200ppm.
-Ice machine clean and sanitary. Ice scoop stored in a sanitary manner.
-Foods stored off the ground and protected from potential contamination.
-Facility is serviced by a professional pest control operator on a monthly basis. Reports indicate minor fly and ant activity.
-No signs of pests noted at the time of inspection.
-General sanitation good at the time of inspection. When tin cats are moved for cleaning, ensure they are position with the entry point next to the wall.
-Washroom clean and sanitary.
-Non potentially hazardous food items are donated to charity. Charity partner picks up the food on a daily basis.
