HAZARD RATING FOR YOUR FACILITY: Moderate (16-29) Total Score = 18
Critical Hazards: There are no critical hazards.
Non-Critical Hazards: Total Number: 2
304 - Premises not free of pests [s. 26(a)]
Observation: Fruit flies noted to varying degrees in different areas of premises. HEAVY activity noted at glasswasher area of bar and surrounding area. Minor activity in basement and steps leading from basement. No activity in staff washroom. Discussed with staff, leak from bar to basement may have created breeding opportunity in floor /ceiling. Pest control planned bombing to take place.
Corrective Action(s): Save Pest Control report for review at follow up inspection. Seek advice from Pest Control on continued fly population control.
Remove all areas of stagnant ponding water as discussed.
Review at follow up inspection - date noted on report.
Violation Score: 9

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Bar area around glasswasher seems to leaking or bleeding onto the floor and into har-to-reach places and is subject to significant fruit fly activity. Hand/dump sink at glasswasher has no access to plumbing. Interceptor pan below glasswasher not adequately containing water or splashes, contributing to fly breeding environments. It seems cleaning and removing bar debris is not sufficient as debris was observed.
Shelves for glasses liquor painted (matt black) and deteriorating. Surface is either flaking paint or noted with significant amounts of dust, including on the plastic bar mats themselves. This was noted in previous inspection.
Corrective Action(s): Shelves should be resurfaced with light coloured material/paint. This will make it easy for staff to see when surface requires cleaning, outsie of normal cleaning schedule. The bar area requires an improved cleaning protocol.
Water run off around and from glasswasher must be improved and fly population controls put in place.
Provide easy access to plumbing in this section as discussed.
Review plan at re-inspection date noted.
Violation Score: 9

Follow Up to "Critical" Violations Noted on Previous Inspections (if applicable): No corrections entered
Comments

Barrier installed at handsink.
**Inserts supplemented with ice "light" with ice. Observed staff refill inserts with very little ice. This has very little chance to keep foods at 4 C. Sauces insert with ice melted. Staff added more to inserts - Make sure to use excessive amounts of ice as discussed if ice supplements to continue.

Cooling units less than 4 C.
hot holding above 60 C.
Dishwasher at 75 ppm chloring
Glasswasher above 12.5 ppm iodine
Quats in tested spray bottles at 200 to 400 ppm and at all tested auto dispensers.

Staff washroom paper towel dispenser to be replaced. Broken.

Discussed ceiling tile in basement with kitchen manager. On order for replacement. Review at follow up inspection.
Basement is better organized.
