Observation (CORRECTED DURING INSPECTION): Appetizer/sauce prep cooler was at 11C (cooler is used to store low potentially hazardous foods).
Corrective Action(s): Cold potentially hazardous foods must be stored at or below 4C to prevent the potential growth of pathogens and or the formation of toxins. Food items were moved to a cooler at 4C.

Observation: 1) Rice scoop was stored inside the rice container.
2) Ice machine had some biofilm growth of the ice machine attachment.
Corrective Action(s): 1) Ensure scoops are stored in a sanitary manner to prevent potential contamination of ingredients. Scoop was relocated at the time of inspection.
2) Clean and sanitize ice machine and ensure ice machine is cleaned and sanitized on a regular basis to prevent potential contamination of ice.

Observation: Appetizer prep cooler was at 11C.
Corrective Action(s): Service or adjust the cooler and ensure it can maintain 4C or less on a consistent basis.

Observation: Bleach spray bottle was unlabelled.
Corrective Action(s): Ensure all chemicals are properly labelled to identify their contents to prevent accidental mixing and/or misuse of chemicals. Containers will need to be relabelled as needed (fade or wear off).

Comments

-Metal upright cooler was at 4C.
-Both upright glass door coolers were at 4C.
-Upright freezer was at -18C.
-No potentially hazardous foods stored in the customer are freezer and cooler.
-Hot holding was greater than 60C.
-Chicken is cooked based on time. Chicken pieces are roughly the same size. Chicken was cooked to greater than 74C.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle and pail were at 100ppm to 200ppm.
-Staff stated rice scoop water changed every 15 minutes.
-Raw meat stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until September 17, 2022.
