Observation (CORRECTED DURING INSPECTION): Three trays of raw meat (shrimp, lamb and chicken) stored in a display cooler that was turned off.
Corrective Action(s): Operator discarded meats. Do not unplug cooler. Coolers with potentially hazardous foods must always be 4 C or less.

Routine Inspection
Facility was not in operation at the time of inspection.
Back kitchen is not being fully used yet for food production and only being used for storage. Showcase Kitchen is being used.

Hand sinks are fully equipped with hot/cold running water, liquid soap and single-use towels.
Walk-in cooler at 4 C or colder.
Drawer coolers in Showcase Kitchen at 4 C or below.
Sink and surface sanitizer registered between 272-700 ppm.
Dishwasher not tested at the time of inspection. Ensure it is reaching 71 C on plate surface during the final rinse prior to using.

Ensure back area is deep cleaned prior to starting full operation.
