Corrective Action(s): Increase cooking section of hot dog grill to 160 - 165 F as per Food Safety Plan.

Manager adjusted temperature, hot dog internal temp 164 F / 73 C.

Ensure staff set temperature controls according to cooking and hot holding sections of grill.

Left upright cooler top shelf 3 C, bottom shelf 9 C. Shelves within cooler are overstocked, preventing cold air circulation within cooler.
Corrective Action(s): Potentially hazardous foods within prep cooler discarded.

To prevent microbial growth potentially hazardous foods such as meat products, cut vegetables, eggs and high moisture grains must be stored at 4 C or colder.

Manager relocated product from left cooler to right upright cooler. Ensure cooler shelves are not overstocked to allow proper air flow to ensure food product remains at 4 C in all locations of cooler units.
