Fridges are all maintaining foods at 4 degrees C. or colder.
Walk in freezer is -18 degrees Celsius.
Undercounter freezer is -13 deg. C. Operator has purchased a new gasket to replace broken one but found they sent the wrong size. To exchange and install.
Strongly recommend lifting grease trap lid to prevent a trippin hazard in back kitchen.
General sanitation is overall excellent.
Temperature logs are being maintained.
Quat sanitizer is being maintained at 200 PPM residual.
