- Operator stated he received the ordered permit in the mail. Find the permit until the follow up inspection and post it in a conspicuous location. Order a new permit if existing permit cannot be found.

Observation:
- Containers for sushi seaweed are stained & observed with sticky debris.
- Garbages and food debris observed behind the chest freezers in the dry storage area.
- Mop sink surface is heavily soiled.
- Dust build up observed on the fan cover inside two door fridge (back kitchen).
- Dust build up observed on ceiling around the celing vents (back kitchen).
- Grease build up observed on the ventilation hood panels.
Corrective Action(s):
- Wash & sanitize seaweed containers immediately.
- Clean all areas noted above.

Observation:
- Caulkings around the hand/prep sink at the front is peeling off.
- Caulkings around the 2 compartment sink in the back kitchen is peeling off.
- All chest freezers' lid compartment is disintegrating.
- Rubber gasket of beverage cooler in dry storage room is peeling off.
- Drink bar handsink perimeter is taped up.
Corrective Action(s):
- Re do the caulking. Remove the tape at the drink bar handsink and finish the corners with caulking.

Comments

- All handsinks (sushi bar, drink station, kitchen, washroom) are fully equipped. *Install paper towel dispensers for at the sushi bar, drink station and kitchen.
- Coolers at 4C or below.
- Freezers ranged from -9C to -22C.
- No hot holding observed at the time of inspection.
- Bleach sanitizer from spray bottles and from bucket measured at 200ppm. Bottle of unscented bleach available.
- High temperature dishwasher reached 71C or above during the final rinse.
- Operator has valid Foodsafe level 1 certificate.
- Monthly pest control by Orkin pest control company - last report was reviewed - no pest activity reported but improvement in sanitation required. Ensure to follow recommendations written in the report.

*Replace the ceiling light tubes inside the kitchen.
