Fumehood is now clean; as discussed, if there is debris buildup again, do not wait until your 6 months service. Either clean it yourselves or get someone else to clean it; you cannot cook food under a fumehood that has grease/debris hanging down from it that can drop directly into the food below.
Sanitation in dishwasing area (behind dishwashing doors and along the wall behind it) is improved and clean now.
Oil debris along the side of the deep fryer has been mostly scraped off; still some remaining debris that will need to be cleaned/scrubbed off.
