Monitoring logs being maintained
**Ensure final rinse temperature for the dishwasher is recorded for the days in which the kitchen is in operation. Large gap in data observed on the data sheet for November.
Dishwasher at 72c (At plate level). Soap dispensed into wash cycle
Walk in cooler at <4c
Walk in freezer at <-18c
Upright freezer and chest freezer at <-18c
*Ice machine is getting due for cleaning (Top side) as a small amount of algae growth was observed
*Relocate several fly traps as they cannot be situated directly above food preparation surface taps as the glue can potentially drip onto food.
