Comments

-General sanitation of food service area is satisfactory. Ensure storage room floor is being cleaned regularly. Minor spill of dry goods noted.
-Handsink supplied with liquid soap and paper towel
-Front prep cooler at 3C
-Back sliding door cooler at 2C
-Countertop cooler at 3C
-Under grill drawer cooler at 4C
-Storage room cooler at 1C
-Storage room chest freezer at -18C
-Rice was being held at 64C
-Sushi rice pH was <4.5 (tested with test strips)
-Scoops being stored in a sanitary manner with handle not in contact with food product.
-Bleach sanitizer used for sanitizing dishes. 100ppm chlorine detected in solution in 3 compartment sink. **Obtain suitable test strips to verify chlorine concentration. Operator had pool test strips. These are not suitable as only read up to 10ppm. Test strips need to be able to read 100ppm chlorine.
-Quats sanitizer (200ppm) present in spray bottle in back prep area (as per violation above, ensure additonal sanitizer is also present in front service area)
-No signs of pest activity at the time of the inspection.
