Observation (CORRECTED DURING INSPECTION): Open metal container storing tomato (canned) observed in the walk-in cooler. Non-food grade containers can leach chemicals into the food products.
Corrective Action(s): Operator removed the contents in the metal container and placed them in a food grade container.

304 - Premises not free of pests [s. 26(a)]
Observation (CORRECTED DURING INSPECTION): 10+ rodent droppings observed along the back cookline. Pests such as rodents can contaminate food products which can lead to foodborne illnesses.
Corrective Action(s): Operator cleaned and sanitized the above mentioned area with the rodent droppings. As per operator, licensed pest control services are in place and logs are available for review. Continue with pest control services to mitigate and elimate the pest issues.

Observation: Grease build-up and food debris observed along the walls and below both cook lines and vents. The food debris can be a pest attractant and the grease build-up can potentially cause a fire.
Corrective Action(s): Increase frequency of cleaning and sanitation in the above mentioned areas.

Observation (CORRECTED DURING INSPECTION): Walk-in cooler and prep cooler (right-side) near the pizza machine registered an ambient air temperature above 4 deg C. Bacteria on cold potentially hazardous food items stored above 4 deg C can grow and possibly produce toxins.
Corrective Action(s): Temperature of coolers were adjusted by the operator in the above-mentioned coolers. Temperatures registered at <= 4 deg C.
Discussed checking temperatures of coolers regularly to ensure that coolers are functioning at appropriate temperatures.
