Observation (CORRECTED DURING INSPECTION): Clean black cups were stored underneath the hand towel dispenser (located at the server station). Cups could be contaminated with water dripping from wet hands. Cups were removed from aforementioned location.

A chest freezer was newly added by the front door. This is used to store retort packaged black bean sauce. Temperature was measured at -18C.

Sanitation
All sinks were adequately equipped for handwashing with hot/cold running water, liquid soap, disposable paper towels.
High temperature dishwasher achieved 71.9C at dish surface after the final rinse cycle.
Sanitizer spray bottles and Pail had 100-200ppm chlorine residual.
Washrooms in good sanitary condition.
General sanitation satisfactory.
Reviewed clean-in-place equipment cleaning protocol and procedure.

Pest control
No signs of recent pest activity was observed at the time of inspection.
No professional routine pest control is in place currently.

Administration
Operator with a valid FOODSAFE Level 1 certificate was on shift.
Permit is posted.

Reviewed newly approved process to sell retorted package of black bean sauce (and spicy version). A freezer was added to compensate for additional food storage. The retort package sealer is stored at the operator's home. All equipment related to the operation of your premise is to be stay at the facility.
