Facility is HACCP certified Coolers @ <4C Freezers @ < -18C Thermometers used and temperatures logged daily Liquid soap and paper towel provided at handsinks. Reviewed hand washing practices and glove use practices Sink and surface sanitizer now used. Tested at 704ppm of lactic acid and test strips are used with logs being kept daily. Ecolab serviced all dispensers this week. 3 sink ware washing in place and being used at time of inspection Sanitizer/dishwasher at >180F/81C at manifold Food contact surfaces are washed and sanitized as needed, particularly between allergens, between batches and at least every 4 hours when in use. Food storage is well organized and stored off the floor. General facility is well maintained Pest control services are maintained monthly and no concerns noted at the time of inspection.
