304 - Premises not free of pests [s. 26(a)]
Observation: Observed rodent droppings (rat) in several areas in kitchen. Noted holes in walls (plumbing, electrical and other) that may be used for rodent movement. Not observed in dining or washroom area of premises.
Corrective Action(s): 1. Clean premises in areas discussed including, under dish sinks and around **grease trap**, shelves around grill, behind updight cooler at back of kitchen and behind deep freezer by door.
FOOD DEBRIS must be removed and prevented from accumulating. This is a food source for rodents and food sources must be addressed to control rodent problem.
2. Block all possible gaps in wall to keep rodents from gaining access to premises. Focus on plumbing and electrical network leading to and from walls. Use steel wool to block these areas off and secure with silicone or similar to gain structural strength.
3. Enter into a contract with a licenced pest control company/technician to eliminate the current rodent activity. Ask for advice on techniques to support their work. Show copy of invoice and PCO's comments for next scheduled inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. **Grease trap** area observed with accumulation of similar waste on and around this unit.
2. Other areas of premises beginning to suffer a build up of food debris.
3. use of cardboard and aluminum foil observed around grill area.
Corrective Action(s): 1. Ensure grease trap is properly cleaned by a professional with proper equipment and disposal capabilities. Avoid doing yourself. Utilize proper cleaning agent to remove accumulation of this type of waste from around this unit. Commercial degreaser recommended, possibly with enzyme base if available.
2. Clean up premises as already noted for rodent control. Be thorough.
3. The use of cardboard and/or other intermediate surfaces (tin foil) may only be used if they are replaced daily and these areas remain part of a satisfactory cleaning schedule.
