203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 3 trays Cooked potatoes and a bucket soup were observed cooling at room temperature. The internal product temperatures were measured to be 34C and 30C respectively. The operator states these food items were cooked an hour and half ago.
Corrective Action(s): The operator was directed to move the cooked potatoes and soups into the walk in cooler. Soups were portioned into smaller size. Ensure potentially hazardous food is cooled from 60C to 20C in 2 hours and 20C to 4C in 4 hours.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine solution dispensed from the low temperature dishwasher at plate level. Sanitizer line was observed to have slow flow rate.
Corrective Action(s): Staff primed the sanitizer line of the low temperature dishwasher and 100 ppm chlorine solution was measured from the plate level. Reclean and sanitize all dishes and utensils before using them to serve food.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. Hand washing station in the kitchen preparation area was not in good working order.. Only hot water was provided and the cold water tap was missing. Staffs could not properly wash their hands at this station. 2. The hand washing station in the front bar area near the kitchen door was not in good working order. Only a small stream of cold water was provided from this station. Hot water tab did not work.
Corrective Action(s): Service/fix both aforementioned hand washing stations to provide hot/cold running water, liquid soap and single use paper towels. In the mean time, use hand washing stations in the employee's washroom and at the bar counter near the glass washer. Correct by: Feb 14, 2019.

Observation: Rodent droppings observed at the bar area under the broken hand washing station.
Corrective Action(s): Clean and remove all rodent droppings from the area and monitor the pest situation on a regular schedule. Contact professional pest control company if the situation persist or worsen. Correct by: immediately.

Observation: 1. Low temperature dishwasher dispensed 0 ppm chlorine solution at the plate level. 2. Dessert cooler was measured to have an ambient air temperature of 7C. No potentially hazardous food was stored inside at the time. This is an outstanding violation from previous inspection.
Corrective Action(s): 1. Sanitizer line for the low temperature dishwasher was primed by a staff. 100 ppm chlorine solution was measured from the dishwasher at the plate level. Corrected during inspection.
2. Service / fix the dessert cooler to ensure an ambient air temperature of 4C or less is maintained. Further enforcement actions (such as Public Health Correction Order and/or Violation Ticket) may be applied if this violation persist. Correct by: Feb 14, 2019.

Observation: 2 missing light covers for the glass light bulbs in the food preparation area. Light cover is required to prevent accidental breakage of light bulbs that can contaminate food items with broken glass pieces.
Corrective Action(s): Install light covers on the aforementioned light bulbs. Correct by: Feb. 22, 2019.

- Hot potentially hazardous foods hot held at 63C.
- Other hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium solution available in spray bottle and from the dispenser.
- Ice machine was in sanitary condition.
- Dry products stored off the ground.
- No professional pest control company contracted at the time of inspection.
