Observation (CORRECTED DURING INSPECTION): 1) Sanitizer in red bucket had 0 ppm quat concentration.
2) Sanitizer in the 3rd compartment sink had only 50 ppm quat concentration. Staff member is mixing water with sanitizer but does not know how much to mix and is not testing the solution either to make sure it is strong enough.

Neither the surfaces nor the dishes are being properly sanitized. Minimum quat concentration required is 200 ppm. Staff member said she has not tested the concentrations of either the solution in the red bucket or in the sink. She does not know what concentration is required.
Corrective Action(s): Staff member re-filled the sanitizer bucket and the 3rd compartment of the sink. She was shown how to test the concentration using the test strips. After being shown, concentrations of the sanitizer in red bucket and at the sink were at 200 ppm.
