Observation: Buffet cold holding ice completely melted. Internal food product temperature of macaroni salad ~14 degrees C., yogurt desert ~11 degrees C., and chick pea salad ~15 degrees C.
Corrective Action(s): Discarded. As discussed in the previous inspection ensure all cold potentially hazardous foods are displayed/stored at or below 4 degrees C. Pre chill cold holding unit and use ice to supplement cold holding.

Followup inspection to Rpt # VCHN - AAJQPD:

Hand sink provided with liquid soap and paper towels. Operator to install a holder for paper towels at the two compartment sink.
Walk in cooler (left) serviced. Ambient air temperature at 4 degrees C.
Temperature monitoring records maintained and available for review.

Many items in the walk in cooler again not covered to protect from contamination.
Bleach sanitizer in container well over 200ppm. Reminder to dilute 1 oz of regular unscented bleach to 1 gallon of water.

Further non compliance will result in the issuance of violation tickets.
