306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Accumulation of debris on kitchen floor, including floor-to-wall junctions.
2. Debris observed on wire racks of small undercounter cooler.
3. Small quantities of food spillage observed in dry storage room.
Corrective Action(s): Ensure above-noted areas are properly cleaned and sanitized. Accumulation of food and other debris may potentially lead to contamination of food and/or food contact surfaces (for example, debris from wire racks falling onto food below). In addition, food debris may potentially attract pest activity. Date to be corrected by: July 12, 2022.

Observation: Walls surrounding kitchen sink are deteriorating and are not sealed against moisture.
Corrective Action(s): Ensure wall is properly sealed with appropriate backsplashes in areas that may potentially be subject to moisture. Backsplashes are to be smooth, non-absorbent, easy to clean, and suitable for the intended purpose. Date to be corrected by: July 19, 2022.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Kitchen faucet is leaking (some water is being sprayed horizontally) when in use.
Corrective Action(s): Ensure faucet is fixed or replaced so that it is in good working order. Water is currently splashing onto side of upright refrigerator (not on food contact surface) and is leaking onto the ground. Leaking water may cause deterioration of surfaces and equipment over time, and may potentially attract pest activity. Any pooling water to be mopped immediately. Date to be corrected by: July 12, 2022.

Observation: Several cold holding units are missing thermometers. In addition, staff unable to locate probe thermometer at time of inspection.
Corrective Action(s): Ensure all cold holding units (e.g. coolers, freezers) are equipped with thermometers accurate to +/- 1 degree C. In addtion, ensure at least one accurate probe thermometer is available on site. Date to be corrected by: July 6, 2022.

Routine health inspection conducted.
- Coolers at 4 degrees C or less.
- Freezers at -16 to -20 degrees C.
- Hot holding internal food temperatures at 60 degrees C or more.
- Raw animal products (shell eggs, raw chicken) not stored above ready-to-eat foods.
- Hand sinks accessible and supplied with hot and cold running water, liquid soap, and paper towels.
- Quaternary ammonium compounds (quats) sanitizer available in spray bottles at 200 ppm.
- Deli slicer was being washed and sanitized at time of inspection.
- High temperature dishwasher measured 78 degrees C at the utensil surface (minimum temperature requirement at utensil surface: 71 degrees C).
- No signs of pest activity observed during inspection.
