Observation: Flooring in walk-in fridge as well as part of deli floor and corridor behind are in very poor shape; they are worn concrete. Re-finish with a smooth, washable, durable non-slip finish.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] (1) Hot water starts to run cold after filling 2 sinks full of hot water. There should be plenty of hot water available for sanitary maintenance.
2) Sanitizer dispenser is hooked up to cold water dispenser and this is the only way to fill the third compartment of the dishwashing sinks as faucet does not reach to third compartment. Dishes can not be easily sanitized in hot water. )

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Worker observed washing dishes in tepid water, and sanitizer is cold water only. Manual dishwashing must be carried out with water and sanitizer solution that is at least 45 degrees Celsius. Re-plumb your sanitizer line. Also ensure that workers are changing wash, rinse and sanitizing sinks frequently so that hot water only is used.
