Observation (CORRECTED DURING INSPECTION): Dish washer final rinse observed at 66.8C at the plate as per min/max thermometer.
Corrective Action(s): Ensure dishwasher can reach at least 71C at the plate. Repair unit so disinfection temperatures can be reached consistently for all dish washing. Correction required immediately. In the mean time:

Wash, rinse and sanitize by suspending dishes in 100 ppm chlorine then allow to air dry.

Observation: The following equipment is in poor working condition and requires repair, maintenance or replacing:

1. Dishwasher final rinse observed at 66.8C at the plate. 71C at the plate is required.
2. White microwave in kitchen is melted on the inside.
3. Top floor bar fridge is not operating. It is only used for bottled beer.
4. Basement walk in freezer and main floor stand up freezer has built up of ice.
5. Fumehood is in need of maintenance as indicated in the cleaning schedule.
Corrective Action(s):
1. Repair unit to ensure final rinse steps reaches 71C at the plate consistently. Repair required immediately.
2. Discard and replace unit.
3. Repair unit if necessary.
4. Defrost ice and repair unit. Correction required in 2 weeks.
5. Ensure to keep up with regular cleaning requirements as indicated by HVAC technician.
