301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Dough mixer contained flour debris over it and it was last used yesterday. Operator stated that they use the dough mixer about 3 or 4 times per day (for sweets and samosas) during the morning time and clean it during the next morning time prior to use.
Corrective Action(s): Make sure the dough mixer is washed, rinsed, and sanitized (with bleach water) every 4 hours between use and after final operation. Food contact surfaces and non-food contact surfaces of the dough mixer were cleaned and sanitized at the time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Several containers of food inside the walk-in-cooler (chana, chicken, lentils, pakoras, etc.) and dry storage room (dry lentils and kidney beans) were uncovered at the time of inspection.
Corrective Action(s): Operator covered all containers with saran wrap, lids, and stainless steel trays. Please review with staff that food is to be immediately covered once it is placed into any storage unit.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Buildup of grease and/or debris was observed on the following areas:
-Stainless steel paneling behind the cooking equipment
-Cooking equipment across from the 3-compartment sink.
-Ventilation hood
-Shelving unit adjacent to the 3-compartment sink.
Corrective Action(s): Clean and sanitize the aforementioned areas to remove the grease/debris and to keep them in a clean condition; Correct by September 6, 2019.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation (CORRECTED DURING INSPECTION): Two bottles of sealed cleaning chemicals were stored next to dry food in the dry storage area on a shelving unit.
Corrective Action(s): Both bottles of cleaning chemicals were re-located to the staff washroom. Make sure all cleaning chemicals and supplies are stored in a separate cabinet/area that is designated only for cleaning chemicals, sanitizers, and supplies and that is separate from food storage, food equipment storage, and food preparation areas.

312 - Items not required for food premises operation being stored on the premises [s. 18]
Observation: Extra trays were observed stored in a garbage bag. White containers were observed stored in the staff washroom. It was discussed with the Operator that garbage bags can contain pesticides and odour-suppressing chemicals and are not a food grade material. It was discussed that food containers must not be stored in the staff washroom to protect them from contamination. Operator stated that these items are extra (not required for business use), placed them in the back hallway and would remove them from the food premises.
Corrective Action(s): Remove the items not required for business use from the food premises; Correct today. If they are required, then clean and sanitize them and store them in a clean shelving unit or clean storage area designated for food equipment only.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: 1) The thermometer in the prep. cooler near the 3-compartment sink was at an inaccurate temperature as it was showing a temperature near 10 degrees C when in fact the cooler was at or below 4 degrees C.
2) Prep. cooler in the front service area lacked a thermometer inside of it.
Corrective Action(s): 1) Operator discarded the inaccurate thermometer. Place an accurate thermometer inside this cooler; Correct by August 28, 2019.
2) Place an accurate thermometer inside the prep. cooler in the front service area; Correct by August 28, 2019.

Comments

Front Service Area:
-Handsink was supplied with liquid soap, hot and cold running water, and paper towels.
-Sweets display coolers were at 0.1 degrees C and 1.1 degrees C (at or below 4 degrees C).
-Prep. cooler was at or below 4 degrees C.
-Sneezegaurd was in place for sweets stored above the counter.
-Operator stated that 7 of their staff members have completed the FOODSAFE Level 1 course.
-Valid FOODSAFE Level 1 certificates were available for the Operator and a staff member on-site at the time inspection.

Kitchen area:
-Handsink was supplied with liquid soap, hot and cold running water, and paper towels.
-Walk-in-cooler (3.9 degrees C) and prep. cooler were at or below 4 degrees C.
-Thermometer was available inside the walk-in-cooler.
-Chest freezer and upright freezer were at or below -18 degrees C.
-100 ppm chlorine sanitizer was available in a container and inside the third compartment sink unit.
-No signs of recent pest activity were present at the time of inspection.
-Prep. tables, display coolers, sinks, and floor appeared to be in a clean condition.

Staff washroom:
-Handsink was supplied with liquid soap, hot and cold running water, and paper towels.
