Observation: Chest freezer lid and walk in cooler door and door frame are not in good condition.
Corrective Action(s): Repair surfaces so they are smooth, in good condition, and can be easily cleaned.
This has been scheduled for repair in early February.

Coolers are at 4 C or colder.
Hand washing sinks have liquid soap and paper towels.
Reviewed procedures for fish batter and cooked onions - discard after 2 hours or store in fridge.
Chlorine sanitizer is used for sanitizing food contact surfaces.
Dishwasher has a chlorine sanitizing rinse - good.
Recommend a liquid pasteurized egg for caesar salad dressing as previously discussed.
Food Safe refresher required by July 2018 for those who took Level 1 prior to 2013.
Owner/operator requires FoodSafe certification and at least one person per shift in the operator's absence. Owner has a valid certificate.
