100 ppm chlorine observed at the plate in final rinse cycle of dishwasher.
200 ppm chlorine observed at the plate in the final rinse cycle of bar glass washer. 100 ppm is acceptable at the glass washer too.
300 ppm quats sanitizer in use in spray bottles.

2 compartment sauce warmer at 62C clam chowder.
White ice cream cooler not in use at the time of inspection.
Counter cooler at 3.6C sour cream.
Stand up glass cooler creamers 4.0C.
2 door counter freezer at -18C chicken thighs without skin.
In line service coolers #1 4.0C salad, #2 raw chicken 4.0C, #3 salsa 3.0C.
Perishables on counter during service are kept cold in ice and used up within 2 hours.
Deep frier cooler -16C chicken strips.
Stand up cooler -6C fries.
Grill fridge bottom 4.0C beef patties and cheese.
Walk in cooler at 5C, walk in freezer ambient at -18C and below.
Walk in cooler currently under going cleaning. Ensure temperature of cooler reaches below 4C within two hours.
