Observation (CORRECTED DURING INSPECTION): Breakfast sausage 54C, probe thermometer
Corrective Action(s): Ensure hot holding food are kept above 60C
Operator was unable to show how long the food was held at less than 60C. Operator discarded breakfast sausage. Sausage was held in a plastic container within the insert, this likely affected the ability for the hot holding unit to keep food over 60C. Operator placed new sausage into its own insert to maintain temperature over 60C and will monitor.
