Observation (CORRECTED DURING INSPECTION): The sliced meat from donair cone was placed in hot holding unit directly without any cook step. Operator performs the secondary cook step when order is prepared
Corrective Action(s): After the meat is sliced from donair cooking machine, cook the meat on grill immediately to 74C internal temperature and then hot hold at 60C.

Routine inspection is conducted:
- Handsink is supplied with hot and cold running water, liquid soap and paper towel
- Line cooler and storage coolers at back is measured at less than 4C
- Hot holding unit is at greater than 60C
- Reviewed the secondary cook step for cooking donair meat.
- Three compartment sink is available for dishwashing.
- Sanitizer solution in a bucket is measured at 200ppm chlorine residual
- No evidence of pest activity is noted
- General sanitation is satisfactory
