- Hand washing sink accessible/unobstructed and properly supplied with hot and cold running water, liquid soap, paper towels.
- Quats sanitizer solution available at 200 ppm for sanitizing food contact surfaces.
- Coolers measured at 4C or less.
- Freezer measured at -18C.
- Time-tracking in use for potentially hazardous items held at room temperature. Good.
- Temperature records up to date and available for review.
- Baker was cleaning the large dough mixer and surrounding area at time of inspection.
- General sanitation has improved, however some deep-cleaning is still required. *Ensure the back dishwashing area is also thoroughly cleaned and sanitized.
- FoodSafe requirements met at time of inspection.
