Observation: Mouse droppings observed behind boxes near the staff washroom.
Corrective Action(s): Clean the mouse droppings. Pest control report conducted in May 2018 shows low pest activity. The restaurant is inspected monthly. Continue to have pest control inspections and monitor for any new pest activity.

Observation: Clutter in the back receiving door (ie cardboard boxes, garbage).
Corrective Action(s): Discard the cardboard boxes and garbage. Keep this area clean and it is prone to pest issues.

Observation: The undercounter cooler behind the sandwich prep cooler was measured at 12C at the time of the inspection.
Corrective Action(s): The operator removed all cold potentially hazardous food items from this cooler and stored them in the walk in cooler. Do not store any food items until this cooler measures < or = 4C. Fix the cooler if the cooler is not able to maintain < or = 4C. The temperature must show < or = 4C during the follow up inspection.

- Front handwashing station supplied with cold/hot running water, soap, and paper towels.
- Walk in cooler = 4C.
- Undercounter cooler behind the sandwich prep cooler = 12C
- Sandwich prep line cooler = 4C
- Beverage cooler (front of the kitchen) = 4C
- Walk in freezer = -18C.
- Daily temperature logs kept up to date.
- Hot holding unit (soup) = 60C
- Hot holding unit (meatballs) = 60C
- Three compartment sink available for manual dishwashing. QUAT sanitizer measured at 200ppm concentration.
- Dry storage area has adequate space and wire racks. Food items are stored min 6 inches (15cm) off the floor.
- FOODSAFE training could not be verified at the time of the inspection. Makes copies of ALL FOODSAFE trained staff and have them available for review by the health inspector. This will be verified during the follow up inspection.
