Observation: 6 containers of marinated meat placed under the shelves on floor inside of the walk-in cooler.
Corrective Action(s): Ensure to have these covered with lids and at least 6inch off the floor to protect them from contamination.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen meat and ground meat being defrosted at room temperature. Temperatures were ranging in between 0'C-6'C. All moved to prep sink under cold running water at this time. To be used within the next 30 minutes for cooking.
Corrective Action(s): Ensure to thaw food by placing under cold running water or in walk-in cooler (at least a day ahead), but never by leaving them at room temperature as discussed at this time.

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezer operating below required temperature of -18'C.
-Hot-holding operating above 60'C. Thermometers available for temperature monitoring.
-General food storage practice satisfactory throughout, except mentioned above.
-200ppm chlorine solution prepared in a bucket to hold wiping cloths. Good.
-Low temperature dishwasher achieved 50ppm chlorine solution on plate level after final rinse.
-Ventilation canopy hood serviced and maintained.
-No evidence of pest activity observed.
-Washroom handsinks satisfactory.

General sanitation of the facility is good at this time.
