Observation (CORRECTED DURING INSPECTION): 1. Sanitizer solution in back kitchen appears dirty and with a soiled cloth - noted 100 ppm chlorine
2. Front butcher area noted with soiled wiping cloth - front sanitizer bottle not labeled but is noted at 200 ppm chlorine.
Corrective Action(s): Ensure sanitizer is maintained between 100 - 200 ppm chlorine in labeled containers and clean wiping cloths available. Dirty or heavily soiled wiping cloths spread debris. Replenish sanitizer bottles weekly and sanitizer buckets hourly. Wiping cloths should be changed at least 2 times a day if they become soiled.
Ensure all food contact surfaces are sanitized at least every 4 hours or sooner.

Observation (CORRECTED DURING INSPECTION): Mouse hole noted in left wall under lower shelf in dry storage area. No mouse droppings noted during inspection. Pest control devices through out facility and especially dry storage room. All food in this area appear to be stored in pest proof containers with lids.
Corrective Action(s): Ensure all hopes and gaps in walls, ceiling and floor are sealed to prevent pest entry.

Routine:
-hand washing station and staff washroom stocked with liquid soap, paper towel, hot and cold running water
-bleach sanitizing solution available on site; sanitizer bottle detected 200 ppm of chlorine
-meat cooler at 3 C or lower
-small sliding door cooler beside counter at 3 C
-front stand-up cooler for beverage at 4 C
-stand-up freezer at -18 C or lower
-no sign of pests noted at the time of inspection - pest control provided by APC Pest Control Services. Continue to follow recommendations and maintain high level of sanitation.
-Food appears protected from contamination - stored in pest proof containers, with lids, scoops stored outside of containers/food, stored at least 6 inch off the ground
*Ensure all food in prep cooler are also covered once put away.
-Discussed manual dishwashing steps with employee; employee explained wash, rinse, and sanitizing (2 minutes minimum) in detail and is aware of the steps that must be taken to properly clean and sanitizing kitchen utensils
-General sanitation satisfactory
