Routine inspection conducted and the following were noted:
All cooler units at 4C or below.
Stand-up freezer in baking area at -18C.
Time records maintained for meat buns and egg tarts held at room temperature for a maximum of 2 hours. However, ensure Portuguese egg tarts is included in the time tracking sheet as it is a potentially hazardous food product.
Excess baked meat buns were hot held to a temperature of at least 60C prior to being displayed at room temperature.
Hot holding for steamed hot buns in the front retail area was at least 60C.
2-compartment sink setup. Sanitizing compartment was filled with a 100ppm chlorine solution.
hand washing stations located in the baking area, front retail, and staff washrooms satisfactory.
All food items stored at least 6 inches off the ground.
No pest activity noted.
General sanitation was satisfactory.
Pasteurized eggs used as egg wash from egg tarts.
