Observation: - Staff was skipping the sanitizing step during the three compartment manual dishwashing method. Proper drain plugs missing.
- Dirt and debris observed in the large ice machine in the back of the kitchen near the staff washroom.`
Corrective Action(s): - Immediately provide proper drain plugs to fill up each compartment with detergent, water, or sanitizer, as per the three compartment dishwashing method.
- Deep clean the inside of the ice machine.

- Fix the high temperature dishwasher and ensure the temperature has reached the sanitizing temperature.

Comments

- General sanitation satisfactory.
- All handwash stations supplied with hot/cold running water, liquid soap, and single use hand towels.
- Surface sanitizer available in designated bins at 200ppm QUAT sanitizer.
- Three compartment warewashing sink available for manual dishwashing.
- Dry storage area has adequate space, shelves, cabinets.
- No signs of pest activity at the time of the inspection. A third party pest control company inspects the facility on a monthly basis.
- Operating Permit with a valid decal posted in a conspicuous area.
- Staff washroom appear to be in sanitary condition. Handwash station fully stocked.

Temperature control:
- Walk in cooler = 2
- Walk in freezer = -18C
- All coolers < or = 4C
- All hot holding units > 60C
- Working thermometers inside all coolers.
- Daily temperature log available not maintained (ie January 20th is missing temperature log in the AM). Ensure to check the temperature of all coolers, freezers, and hot holding units daily, as per company policy.
