Observation: Back storage area - underneath the shelves had debris and food particles. Bottom shelf is cluttered and plenty of hidden spaces for pests to hide. Underneath prep table in the back kitchen area had food particles and debris on the edges of the wall.
Corrective Action(s): Move items on the bottom shelf and clean floor thoroughly. Remove all miscellaneous items not required for the business. Also, clean underneath the prep table in the back kitchen area.

Hand wash sinks provided with liquid soap and paper towels.
Bleach solution in buckets measured 100 ppm.
Refrigeration units registered at or below 4 deg C.
Monitor sandwich prep line cooler to ensure it maintains temp. of 4 deg C or colder.
-Adjust temperature so that it is colder to compensate for constant opening/closing.
Walk-in freezer and other freezer units were at -18 deg C.
Hot holding for soup was above 60 deg C.
Temperature log was available and up to date.
Low temp. dishwasher had 100 ppm chlorine residual.
Kitchen staff were wearing clean uniform and hair restraint.
There is pest control monitoring in place. For follow-up, provide most recent pest control report.
Server's area - Salad cooler was at or below 4 deg C. Hand sink provided with liquid soap and paper towels.
- Dipper well was in god working order. Counter top was in sanitary condition.
Dining area was clean and cups and utensil on table were protected from contamination.
Staff washrooms and public washrooms were clean and provided with sanitary facilities.
Items to address:
Clean outside back area and also garbage disposal area.
Warmer temperatures - clean garbage area helps in reducing the number of flies and other pests.
Ensure operator and staff have current Food Safe level 1. All Food Safe 1 certificates issued before July 29, 2013 will expire July 29, 2018.
Provided operator with Food Safe reminder card.
