Observation:
Corrective Action(s): Continue with routine cleaning and repair the broken floor tile in second floor dining kitchen.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Main floor dishwasher has been serviced and still requires repair. In the meantime, dishes and utensils are being washed and sanitized in dishwasher in second floor kitchen (as per GM). The second floor salad cooler underneath air temperature is <4C (good). The upper inserts are above 4 C (8 C measured). Mainly lower risk foods with a high turnover stored here (cheese moved to alternate cooler). This cooler was serviced.
Corrective Action(s): Repair the main floor dishwasher as soon as possible and only use to wash dishes once the final sanitizing rinse can reach 82C at the gauge and at least 71 C inside of the machine.
The second floor salad cooler is being used for lower risk food items. Keep lids closed and monitor food temperatures regularly.
