- All hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels
- High-temperature dishwasher reached 74C at the dish surface during rinse cycle - good
- Quat sanitizer solution available at 200 ppm in sanitizer pails. Pails were properly time-tracked and are changed every 2 hours.
- Ice water for storing coffee stirring utensils were also properly time-tracked - good.
- All coolers were measured at 4C or colder.
- Freezer measured at -23C
- All hot-held food items were measured at 60C or hotter
- Accurate thermometers available
- Food storage practices were satisfactory
