Observation: 1. Garlic butter was observed double stacked in walk in cooler again. This is a repeat violation. (CORRECTED AT THE TIME OF INSPECTION).
2. Some bulk containers still needed dedicated food scoops.
Corrective Action(s): 1. Do not double stack food containers without lids or covers.
2. Food scoops are on order with Sysco. Operator indicates they will arrive next week.

Previous infractions corrected:

1. Ecolabs was used to address cleaning and fruit fly issue. Cleaning and fruit fly removal service in place
2. Cleaning in noted areas complete. Ensure to clean spills and dust build up as per sanitation plan.
3. Proper food containers are now used. More dedicated food scoops on order.

Holding units in service at the time of inspection:

Sauce holding unit at 65.2C garlic sauce, potato oven at 62.0C, roast oven at 60C, front salad prep counter at 4.0C dice lemons and cucumbers.
Rush hour condiments suspended in ice and discarded after 2 hours.

Contact Fraser Health when glass washer is installed or change in floor plans will be required if removed permanently.
A glass washer for glassware is recommended as per approved floor plans.
