Observation (CORRECTED DURING INSPECTION): High temperature dishwasher not reaching a temperature of 71 C on utensil surface during final rinse cycle. Dishwasher was ran 3 times.
Corrective Action(s): Repair dishwasher or adjust hot water setting so that a temperature of at least 71 C can be achieved on plate surface during final rinse. In the interim, manually sanitize dishes using bleach. Follow the instructions posted for manually dishwashing (place clean dishes in a 200 ppm beach solution for 2 minutes and then air dry).
Correct immediately.

Corrective Action(s): Cardboard is not an approved material for flooring. Cardboard cannot be cleaned/sanitized and can hold onto moisture.

Routine Inspection

-All coolers at 4 C or below (except mini beverage cooler with only non-perishable drinks).
-All freezers -18 C. .
-Soup hot hold at 60 C - good. Do not let allow hot potentially hazardous foods that are being hot held, to drop below 60 C.
**Reminder, do not keep refrigerated foods on the counter for more than 2 hours.
-Hand washing sinks available in front and back - both equipped with hot and cold running water, liquid soap and single use towels.
-Surface sanitizer (bleach at 200 ppm) available and wiping cloth stored in solution - good. Reminder, solution should be made fresh daily if in a spray bottle or changed at least every 4 hours when in a bucket with a wiping cloth (use test strips to verify strength).
