Corrective Action(s): Ensure all food products are stored on shelving or at least 15 cm off the ground. Correction required in two days.

Observation: Old food debris, food spills and/or grease build up was observed:
1. Between the burger grills and on the floor under the grills.
2. A food spill was observed under the shelving of dock cooler one. Under the Smokey's Poutiner Potato bags.
Corrective Action(s): Clean these hard to reach areas as per cleaning schedule. Correction required in a week.

Comments

Premise overall is sanitary. No signs of pests at the time of inspection.
Food in general protected from contamination.
All hand sinks in use with liquid soap, paper towels and hot and cold running water.
All cold holding units at 4C or below. Freezer units at -18C or below.
All hot holding units are at 60C or above.
Salad station food on display is suspended on ice, time tracked and discarded at the end of lunch shift (less than 4 hours).
Ice cream scoops are kept in cold running water. Ice machine is sanitary with dedicated scoops.
Walk in cooler 1 at 3.6C (bacon), walk in cooler 2 at 3.8C (raw meats).
Backdoor external cooler at 3C.
New dock coolers at 3C; freezers at -20C. Installation of door trims and door way covers complete. Good.
Temperature monitoring in use and is logged.
Utensils and condiments stored in a sanitary manner.
Final sanitization step at the plate for dishwashers as per min/max probe #1 73.3C, #2 73.9C.
300 ppm quats sanitizer in buckets in used.
Staff washrooms and storage areas are sanitary with fully stocked hand sinks.
Prep sinks in use and in good working order.
