Observation (CORRECTED DURING INSPECTION): Back kitchen hand washing sink did not have hand washing soap. Ensure to refill when needed. Single use paper napkins were available for hand drying but when possible refill the towel dispenser designated as "Freddy" to ensure easy access to paper towels for hand drying.
Corrective Action(s): Ensure all hand washing stations are in use with adequate liquid soap, paper towels and hot and cold running water.

Observation: 1. Lemon and limes at the front of the house bar station requires a food grade lid to prevent splashing of hand washing into food contents. (CORRECTED AT THE TIME OF INSPECTION)
2. Light tube protect covers missing above the dish washer in kitchen.
Corrective Action(s): 1.Ensure all food products and utensils are protected from contamination. A splash guard at the hand washing station is recommended in the future.
2. Replace light tube covers in kitchen to prevent shattering of light tubes onto staff and food service area. Correction required in 3 weeks.

Observation: Flies and fruit flies observed on premise. Flies are most active in back kithcen door.
Corrective Action(s): Ensure to minimize and reduce the presence of pests. Enlist a pest control company if required. Clean up any food spills or close access points which may allow pest entry. Correction required in one week.

Observation: General cleaning needed in areas with built up of old food debris and dust accumulation, such as sauce stains on the ceiling, dust build up on vents and dust build up in walk in cooler fan and surfaces.
Corrective Action(s): Cleaning required in above areas to prevent food contamination and attracting pests. Correction required in 2 weeks.

Observation: 1. Service cooler holding pineapple and spinach has a build up for water leak inside. Clean and repair unit to prevent contamiation of food.
2. Glass washer requires several runs to reach adequate sanitizing levels at 12.5 ppm Iodine. Maintenance and repair required. Ensure to test daily and log required chemical levels for required 12.5 ppm Iodine.
Corrective Action(s): 1. Clean and repair unit. Repair required in 2 weeks.
2. Repair and maintanence required for glasswasher unit. Test daily and log required chemical sanitizer level. Do not use glass washer if sanitizer concentration is inadequate. If the unit is in repair, use main dishwasher in main kitchen in the mean time.

Washrooms are sanitary with fully stocked hand sinks.
Ice machine is sanitary with dedicated hand scoop. Ice cream scoop station held in cold running water.
Take out containers and utensils are sanitary.
Quat sanitizer in use at 200 ppm in labelled spray bottles.
Dishwasher final rinse at 100 ppm chlorine.
Glass washer final rinse at 12.5 ppm Iodine (it took two runs to reach required concentration).
Chemical test strips.
Valid Permit posted in conspicuous location.

Holding units:
Coolers at 4C and below.
Walk in cooler at 3.2C. Freezers at -18C and below.
Hot holding unit at 60C and above (tomato soup).

Recommendation:
1. Ensure to monitor and log daily temperature holding units for food.
2. Ensure to monitor and log daily chemical sanitizer levels for all units and solutions in use.
Daily logs will be reviewed during next inspection.
