Observation (CORRECTED DURING INSPECTION): 6 egg tarts were stored at room temperature and not in the hot holding case. Staff member discarded food product. Also, noted staff member turning up the hot holding case temperature upon inspection from 50C to above 60C. All potentially foods containing meat, egg, or cream must be kept greater than 60C or less than 4C.

Routine inspection conducted and the following were noted at the time of inspection:
Front cold display case at 3C.
Walk-in cooler at 3C.
Hot holding of steam buns was at least 60C.
A few lotus sticky rice stored at room temperature, but not offer for sale. Majority supply of sticky rice was stored in steam case (greater than 60C) or in front display case (less than 4C).
No pest noted.
Chlorine sanitizer available in food preparation area. Concentration was at 100ppm.
Final rinse temperature at plate level for high temperature dishwasher was at least 72C at plate level. Ensure a minimum temperature of 82C is achieved a plate level or 72C at plate level. Unit needs to be verified daily.
Uncounter prep-cooler at 4C.
