205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Two large vats of gulab jamun, made yesterday, were stored at room temperature underneath the prep table at a temperature of 21C.
Corrective Action(s): Both vats of gulab jamun were discarded at time of inspection. You MUST ensure that gulab jamun, after being made, is properly cooled from 60C to 20C in 2 hours, and from 20C to 4C within 4 hours.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Potato cutter was stored direclty on the floor.
Corrective Action(s): Potato cutter was placed in the two-compartment sink for warewashing. Never store any items directly on the floor. They must be cleaned and sanitized AFTER USE and stored in sanitary condition until use.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): One employee observed rinsing his hands, and then proceeding to work.
Corrective Action(s): EHO demonstrated proper hand washing procedure to the employee. You must ensure that you properly wash your hands, including lathering for at LEAST 20-30 seconds. Employee then proceeded to wash his hands correctly prior to re-suming work.

Observation: No lighting is present in the walk-in cooler.
Corrective Action(s): Lighting must be replaced / re-installed in the walk-in cooler. Adequate lighting is essential to ensure that food, as well as any buildup of grime / debris, can be easily identified in the cooler.

209 - Food not protected from contamination [s. 12(a)]
Observation: Multiple items in cooler, including sweets and pakoras, were left uncovered and on the floor at time of inspection.
Corrective Action(s): All items in the cooler need to be elevated OFF the floor (e.g. on shelving) AND be covered to protect it from contamination. Keep all items off the floor so that the floor can be easily swept.

304 - Premises not free of pests [s. 26(a)]
Observation: Concentrated rodent activity (droppings) noted along the corner of the dry storage room. The wooden platform was removed, revealing an abundance of droppings underneath.
Corrective Action(s): Remove droppings with 1 part bleach, 9 parts water. Further efforts need to be made to prevent rodents from entering. Furthermore, additional traps may need to be set in the dry storage room. Collaborate with your pest control company immediately on preventative appraoches. The corner walls also need to be reinforced to prevent infiltration by rodents.

Routine inspection conducted. The following was noted during the inspection:
Walk-in cooler at 4C
Display cooler for gulab jamun at 4C
Chest freezer at -18C
Temperature logs up-to-date
Two-compartment sink stocked with hot/cold running water, liquid soap, and single-use paper towels
Bleach sanitizing pail at 200 ppm. You must ensure that you USE the sanitizing pail regularly to wipe down work surfaces, such as stainless steel tables and cutting boards, after use
